What make Vanilla from the islands of Tahiti so different than other vanillas?
Vanilla from Tahiti or vanilla in general is very much like wine. It taste, flavor, aroma and appearance is heavily influenced by the species of vanilla, climate, growing conditions, skill of the grower and curer. One of the primary differences in vanilla that is grown in Tahiti is the way it is cured. Vanilla is first harvested when it is ripe on the vine and then picked and left at room temperature until the vanilla pod is completely brown. Once brown and slightly tender the beans are then taken into the sun and rinsed with clean cold water and left to dry for a period of several hours. They are then wrap in cloth blanket to keep warm and placed inside wooden boxes to keep warm and begin the sweating process.

From here the vanilla will be placed in the sun every day during the warmest period for 0-3 hours depending on the weather to continue to dry and then back into crates for sweating. This process of heating the beans and then sweating them is what develops the flavor and aroma and reduces the moisture content of the vanilla bean.
